Los antocianos como marcadores de la biodiversidad en cultivares de vid (Vitis vinifera L.) cultivados en Galicia

Abstract

Tradicionalmente la caracterización de cultivares de vid se ha venido realizando mediante la descripción de sus características morfológicas y agronómicas, que –como es sabido- en muchos casos dependen en exceso de las condiciones ambientales. Así, la búsqueda de marcadores bioquímicomoleculares (DNA, enzimas,…) de utilidad para la caracterización y la clasificación de los cultivares de vid ha sido una constante. En este sentido, entre los compuestos metabólicos utilizados con éxito en quimiotaxonomía de la vid, destacan los de naturaleza fenólica, y entre ellos –y para las variedades tintas- los antocianos, responsables del color y alguna otra característica organoléptica de uvas y vinos. Pertenecen al grupo de los flavonoides y en las viníferas están presentes como formas monoglucosiladas de cinco antocianidinas (cianidina, delfinidina, petunidina, peonidina y malvidina) y sus correspondientes acetil, p-cumaroil y cafeoil derivados. Presentamos aquí la caracterización antociánica de seis cultivares tintos de vid cultivados en Galicia, el conocido como Tinta Oubiña y cinco de los que han adquirido mayor relevancia en nuestra Viticultura por su interés enológico: Mencía, Brancellao, Sousón, Merenzao y Mouratón.
