Composición estilbénica de mostos de la variedad Albariño (Vitis vinifera L.)

Abstract

Los compuestos de naturaleza estilbénica han adquirido un considerable interés en los últimos tiempos, no sólo por sus propiedades como antioxidantes, que confieren efectos beneficiosos sobre la salud humana a los alimentos que los contienen, sino también por su papel en la defensa de las plantas frente a situaciones de estrés biótico y abiótico. En el caso concreto de la vid, estos compuestos han sido estudiados fundamentalmente en vinos tintos y por su interés en el campo de los alimentos funcionales, pero se sabe que muchos de ellos (resveratrol y derivados) actúan también como fitoalexinas frente al ataque de organismos patógenos. En este trabajo presentamos los resultados del análisis de estilbenos en mostos de la variedad Albariño y durante tres años consecutivos, con el objetivo de estudiar la posible relación entre el contenido en estos compuestos fenólicos y las condiciones ambientales, pudiéndose observar la existencia de diferencias significativas para dos de los estilbenos identificados, la trans-astringina y el trans-resveratrol.
