Abstract

El aceite de oliva es un zumo natural que conserva las propiedades de la aceituna y que se asocia con multitud de efectos beneficiosos para la salud. Considerando que las enfermedades cardiovasculares constituyen la principal causa de mortalidad en el mundo, en esta revisión se describe un análisis del conocimiento actual sobre los efectos derivados del contenido en ácido oleico y componentes menores del aceite de oliva sobre los principales factores de riesgo cardiovascular.

Olive oil is a natural juice that conserves the chemical properties of the olive fruit and is considered a major dietary fat in preserving a healthy and relatively disease-free population. Cardiovascular disease has become one of the leading causes of death worldwide. Here, we review the state of the art concerning the knowledge of the most important healthy effects on major cardiovascular risk factors related to oleic acid and minor constituents in olive oil.
