La dieta para un mejor estado de hierro ¿necesidad de reevaluar las recomendaciones?

Abstract

[Metodos]: 112 mujeres jovenes. Criterio de inclusión: edad 18-45, ferritina ó = 11g/dL. Criterios de exclusión: amenorrea, menopausia, fumadora, embarazo, lactancia, enfermedades relacionadas con el metabolismo del hierro. Cada voluntaria realizó un registro de alimentos de 72-horas, que se valoró empleando un programa informático. Se analizó: hemoglobian, hierro sérico, ferritina, transferrina y se calculó la saturación de la transferrina. Los datos se analizaron mediante regresión lineal, ANOVA y test de Bonferroni.

[Resultados]: El estudio de regresión reveló que el parámetro dietético más relacionado con la ferritina era el hierro hemo. Por tanto, la muestra se divide en cuartiles de hierro hemos ingerido. [Conclusión]: Un mejor estado de hierro se relaciona en mujeres con predisposición a anmeia con mayor ingesta de hierro total y hierro hemo, pero con una dieta más alejada del perfil calórico y lipídico recomendado para la población adulta.

[Introducción]: La anmeia ferropénica es una de las más importantes deficiencias nutricionales y su prevención es uno de los principales objetivos de la OMS. [Objetivo]: Conocer los factores dietéticos que más se asocian con protección frente a la ferropenia en un grupo de mujeres con deficiencia de hierro.
