Determinación de metabolitos secundarios libres y glicosilados de variedades cultivadas en la D.O. Valdeorras (Galicia)

Abstract

En este estudio nos hemos planteado analizar los metabolitos secundarios libres y ligados de las variedades más cultivadas en D.O. Valdeorras (Ourense), la blanca Godello y las tintas Mencía, Merenzao, Brancellao y Sousón. La identificación y cuantificación de compuestos se realizó mediante GC-MS. Se han cuantificado 7 familias de compuestos enc: ompuestos en C6, alcoholes, monoterpenos, ácidos volátiles, fenoles volátiles, C13- norisoprenoides y compuestos carbonilados en sus fracciones libresy ligadas. La concentración total fue mayor para la variedad tinta Merenzao. A nivel de fracción libre la mayor concentración correspondió a la variedad tinta Sousón y en la fracción ligada fue Merenzao la que presentó mayor fracción ligada, mostrando esta última un gran potencial aromatico. La variedad blanca Godello se caracteriza por altos contenidos C13-norisprenoides ligados.
