El simbolismo del olivo y del aceite

Abstract

El aceite, además de cumplir una función fundamental en la dieta mediterránea, cumple una función simbólica, máxime en estos momentos en que las sociedades avanzadas están a la busqueda de referencias y de la memoria. Las cosas no son lo que parecen sino lo que el hombre quiere que sean; es decir. lo más importante de las cosas no es su apariencia sino el significado o el valor añadido. Uno de los elementos escogidos por las sociedades mediterráneas y, gracias a la globalización, por otras muchas que no tienen nada que ver con la cultura tradicional mediterránea, es el aceite. En restaurantes de moda, los maitres hacen todo un ritual a la hora de condimentar ciertas comidas con aceite. Todo ello no va en detrimento de sus cualidades terapéuticas ni dietéticas. A las virtudes "reales" del aceite hay que añadir sus virtudes "imaginadas", responsables de su eficacia simbólica. Por otra parte, cada día están apareciendo sociedades que organizan jornadas de degustación de diferentes aceites como, desde hace tiempo, se viene haciendo con el vino. Todo esto confirma que "los mitos no desaparecen sino que se transforman", y que "los dioses nuevos muy raras veces destierran por completo a los dioses viejos".
