Comparación de ácidos grasos en músculo de atún rojo del atlántico

Abstract

El cultivo del atún rojo del Atlántico (Thunnus thynnus) ha avanzado considerablemente en los últimos años hasta obtener su reproducción en cautividad. Sin embargo, existen muy pocas publicaciones que estudien la proporción de ácidos grasos en el músculo de dichos individuos. En este trabajo se ha analizado el contenido de ácidos grasos en el músculo de individuos de atún rojo del Atlántico cultivados con el objetivo de compararlos con los niveles existentes en individuos salvajes, observándose grandes diferencias entre los mismos.

Comunicación presentada al XIX Congreso Nacional de Acuicultura 2024, celebrado en Las Palmas de Gran Canaria entre los días 17 a 20 junio de 2024.
