Abstract

El GABA es un aminoácido no proteico sintetizado a partir del ácido glutámico por acción de la enzima glutamato descarboxilasa (GAD). El GABA es un compuesto bioactivo que actúa como neurotransmisor en el sistema nervioso central. Participa en la relajación muscular, mejora la regulación del sueño, reduce la presión arterial y modula la función renal. Estas propiedades hacen que la industria láctea esté interesada el desarrollo de alimentos funcionales enriquecidos en GABA. La actividad GAD está ampliamente documentada en cepas de diversas especies de bacterias ácidolácticas (BAL). El objetivo de este trabajo fue el aislamiento, identificación y caracterización de cepas de BAL productoras de GABA para utilizarlas como cultivos iniciadores en el desarrollo de alimentos fermentados enriquecidos en este compuesto.
