Características de la canal y de la carne de terneros lechales: comparación de los genotipos limusín y tudanca X charolés

Abstract

The aim was to compare carcass and meat quality of two calves genotypes (Limousin and Tudanco x Charoles). The calves were under grazing and natural rearing conditions and supplemented with concentrates until slaughter at 6-8 months of age. An higher carcass weight and carcass yield of Limousin animals and a higher fat content of meat in the genotype Tudanca x Charoles were found. Carcass morphological conformation showed higher values in calves of Limousin genotype. The meat L* and b* values were higher and the meat b* value was lower for Limousin calves. Not relevant differences in meat yield were evidenced.
