La listeriosis es una enfermedad de transmisión alimentaria de elevada fatalidad Afecta principalmente a grupos de riesgo como personas de tercera edad, embarazadas, recién nacidos e inmunodeprimidos Una de las principales vías de contaminación de alimentos es la contaminación cruzada a partir del contacto con superficies contaminadas de la industria alimentaria, dónde la bacteria persiste formando biofilms
