Abstract

Se ha informado que seobservan glóbulos coloidales formando parte del coloide sol-emulsión característico de los aceites de oliva vírgenes sin filtrar, así como en el producto antes de un período de reposo en tanques. En este trabajo se plantea la hipótesis de que la adsorción de ácidos grasos libres en la pseudo-pared de estos glóbulos puede reducir la acidez funcional del aceite de oliva. Lo anterior puede significar que los ácidos grasos resultantes de hidrólisis de los triglicéridos no están libres en el aceite de oliva velado, sino 'cautivos' en dichas pseudo-paredes. Es razonable que este hecho pueda reducir su actividad química. Por tanto, es lógico que los ácidos grasos unidos a las pseudo-paredes de los glóbulos puedan tener una menor influencia en la percepción de acidez por parte del consumidor o catador de estos aceites de oliva vírgenes velados. El método oficial de análisis de la acidez del aceite de oliva no puede detectar este último efecto ya que es una prueba de titulación. Si esto es cierto, como parece lógico, los aceites de oliva vírgenes frescos velados pueden ofrecer una modulación natural de su acidez, mientras conservan dicho estado físico.
