La presente Tesis Doctoral estudia la producción de compuestos bioactivos de interés en bacterias del género Bifidobacterium, para su posterior inclusión en alimentos. Se demostró la capacidad de biosíntesis de ácido gamma aminobutírico (GABA) en cepas de B. adolescentis a partir de su precursor, el glutamato monosódico, y la capacidad de biosíntesis de riboflavina en clones seleccionados en el laboratorio a partir de cepas de B. longum subsp. infantis.
