[ES]La presente invención aporta seis cepas del género Bifidobaterium y los extractos resultantes de su metabolismo que contienen proteínas antibacterianas. Estas proteínas presentan un amplio espectro de actividad que incluye bacterias Gram-positivas y Gram-negativas. Las cepas de la presente invención son estables en las condiciones de estrés gastrointestinal (pH ácido, alta concentración de sale y en las condiciones de los procesos tecnológicos de conservación y elaboración de alimentos. Además, g presentan un perfil de sensibilidad a antibióticos que garantiza su seguridad. Estas cepas y sus extractos pueden ser empleados como probióticos con propiedades protectoras frente a patógenos gastrointestinales y como bioprotectores o conservantes de alimentos o frente a bacterias patógenas y alterantes.
[EN]The invention relates to six strains of the genus Bifidobacterium and to extracts resulting from the metabolism thereof, which contain antibacterial proteins. The aforementioned proteins have a wide range of activity including Gram-positive and Gram-negative bacteria. The inventive strains are stable under gastrointestinal stress conditions (acid pH, high salt concentration) and under conditions associated with food preparation and preservation technological processes. In addition, said strains have an antibiotic sensitivity profile which guarantees the safety thereof. The strains and the extracts thereof can be used as probiotics with properties that protect against gastrointestinal pathogens and as bioprotectors or food preservatives that protect against pathogenic and alterative bacteria.
