Abstract

Roque a Hortensia: ¿Cuánto lleva ejerciendo su profesión, y la misma ha sido vocacional?Hortensia: Mi profesión la ejerzo desde hace 36 años. Cuando acabé en la Universidad de Valencia, ingresé al Instituto de Agro-química y Tecnología de Alimentos (Consejo Superior de Investi-gaciones Científicas) para realizar la tesis doctoral. Cuando leí la tesis doctoral, continué investigando en microbiología de alimen-tos. Mi trabajo es vocacional. Siempre me atrajeron las probetas y matraces. Soy muy curiosa y quiero saber qué pasa en los alimentos a nivel microscópico.
