Actividad celulolítica en aceitunas durante su maduración y ablandamiento

Abstract

Se sigue la evolución de la actividad celulolitica en trece extractos enzimáticos de aceitunas a lo largo del proceso de maduración y ablandamiento del fruto, durante cuatro campañas sucesivas, observandose que no se detecta actividad en fruto verde y que sólo a partir de color cambiante comienza a aparecer, incrementándose notablemente en fruto negro, hasta llegar a valores elevados en negro sobremaduro Con objeto de establecer la influencia del tiempo de almacenamiento sobre la actividad enzimática, se realizan experiencias sobre frutos recogidos a intervalos de tiempo determinados, almacenados a 15- 18ºC. Se comprueba que la actividad celulolitica aumenta notablemente durante el almacenamiento. El crecimiento es suave en los comienzos -teniendo como agente iniciador el etileno- y aumenta de forma drástica a medida que transcurre el tiempo.
