Efecto barrera del material de envasado en pescado graso refrigerado

Abstract

Se ha estudiado la efectividad del material de envasado en la vida útil de dorada fresca (Sparus aurata), procedente de la acuicultura. Se han empleado dos mezclas ternarias, conteniendo CO2, O2, y N2 (46%, 10%, 44% y 70%, 5%, 25%). Como material de envasado se han utilizado películas y envases con características de baja barrera (LB) y alta barrera (EVOH), en ambos bandeja y película de envasado así como una combinación de ambos materiales. La valoración del efecto del material se realizó de acuerdo a cambios en las mezclas gaseosas iniciales y a la cuantificación de variables sensoriales, químicas y microbiológicas durante el almacenamiento a 2-3ºC. Los resultados apenas han permitido establecer diferencias entre los diferentes tipos de materiales. De acuerdo con los resultados, el material de baja barrera sería suficiente para el envasado de esta especie en atmósferas modificadas a 2-3ºC
