Abstract

Resulta curioso observar las grandes diferencias entre los mercados pesqueros de países que son tenidos como pertenecientes a una misma área cultural. Un producto tenido por exquisito en un país puede ser considerado en otro vecino como alimento despreciable. Así, nosotros apreciamos mucho el bacalao salado y tenemos en poco el bacalao fresco, lo contrario de los países anglosajones; quienes no consumen rape ni merluza. Los ingleses tienen un gran aprecio por las rayas, que son para nosotros pescados de tercera categoría. El arenque tiene una incomparable falta de mercado en España, donde estamos dispuestos a comer peces de mares, no importa lo lejanos que sean. Los cefalópodos sufren cambio de precio de unos mercados a otros como del todo al nada. En un número reciente de esta revista, nos decía Mareiro que los británicos parece que ahora están empezando a descubrir los cefalópodos. El mismo pulpo roquero tiene enormes diferencias de aprecio en los mercados de España. Nuestro mercado nacional tiene un producto de lujo, las angulas; y el gallego, en concreto, la lamprea. Resulta curioso considerar lo que ocurre en Norteamérica con estas dos especies, ahora que son tan escasas en nuestros ríos.
