The excessive use of fossil based plastic has awakened the need to search for new and more sustainable materials. Starch is a biobased and biodegradable polymer, which has been used for decades in the pharmaceutical, cosmetic or food industry. In recent years, new applications have been studied based on natural and modified starch. This article summarizes the structure, some examples of modifications and applications of this versatile material.
