Abstract

Productos cárnicos y de la pesca enriquecidos en licopeno mediante la adición de piel de tomate. La presente invención describe el procedimiento de fabricación de productos cárnicos y de la pesca, frescos, cocidos y madurados, enriquecidos en licopeno mediante la adición de piel de tomate seca y molida procedente del subproducto de la industria de fabricación de productos derivados del tomate y del excedente agrícola de la producción de tomate fresco. En todos los casos, las características sensoriales del producto obtenido son aceptables. La invención se enmarca en el área de alimentos enriquecidos con compuestos bioactivos y es también aplicable a productos de reducido aporte calórico o bajos en grasa.
