Abstract

[ES] La presente invención relaciona a la transformación de las azúcares de categoría alimenticia que contienen D-fructose, en los caramelos enriquecidos en oligosacáridos con actividad prebiotic usando los catalizadores de ácido sólidos, tales como zeolitas, las arcillas o las resinas de intercambio iónico en su forma ácida, bajo condiciones heterogéneas, o usando los catalizadores del polímero de ácido del soluble del peso molecular alto, bajo condiciones homogéneas, con la posibilidad del reciclaje el catalizador, ser compatible con procedimientos discontinuos o de la producción continua. El caramelo resultante exhibe las propiedades prebiotic, favoreciendo el desarrollo de una flora intestinal beneficiosa y un efecto de reparación en el colon dañado.

[EN] The present invention relates to the transformation of food-grade sugars containing D-fructose, in caramels enriched in oligosaccharides with prebiotic activity by using solid acid catalysts, such as zeolites, clays or ion-exchange resins in its acid form, under heterogeneous conditions, or by using soluble acid polymer catalysts of high molecular weight, under homogeneous conditions, with the possibility of recycling the catalyst, being compatible with discontinuous or continuous production processes. The resulting caramel exhibits prebiotic properties, favoring the development of a beneficial intestinal flora and a repairing effect in the damaged colon.
