Análisis de la efectividad de la endolisina LysRODI para eliminar Staphylococcus aureus en leche

Abstract

Staphylococcus aureus es uno de los principales microorganismos responsables de la mastitis bovina, enfermedad que da lugar a pérdidas económicas en el sector lácteo. Además, este patógeno puede también llegar a contaminar la leche, derivando así en un problema de salud humana. Recientemente, se está explorando el uso de bacteriófagos, virus que infectan bacterias, y sus proteínas derivadas como una alternativa y/o complemento a los antibióticos y desinfectantes convencionales. LysRODI es una endolisina de origen fágico con actividad peptidoglicano hidrolasa que, cuando se administra desde el exterior, degrada el peptidoglicano de la pared celular bacteriana, lo que acaba desembocando en la lisis de la célula. En trabajos anteriores ya se había demostrado su efectividad frente a biofilms formados por este microorganismo. Este trabajo explora la eficacia de esta proteína para el tratamiento de leche contaminada con S. aureus. Así, se estudió el efecto del tratamiento con LysRODI a distintos tiempos de incubación y a distintas temperaturas (25ºC y 37ºC). También se analizó la actividad de este enzima frente a distintas cepas de esta bacteria y distintos niveles de contaminación bacteriana. Los resultados mostraron la posibilidad de utilizar esta proteína para reducir el número de células de S. aureus en leche, si bien la eficacia del tratamiento depende de las condiciones ambientales y del grado de contaminación. Por tanto, será importante estudiar en un futuro la posible combinación de LysRODI con otros antimicrobianos para conseguir maximizar la eliminación de S. aureus.
