Abstract

Los microorganismos utilizados actualmente en la fabricación del queso derivan de especies silvestres que se han adaptado a los requisitos específicos del ambiente lácteo, en un proceso que se viene desarrollando desde que los humanos introdujeron esta tecnología, hace aproximadamente 8.000 años. Comprender esta dinámica es importante, no solo desde el punto de vista biotecnológico, sino porque representa un paradigma del impacto de la transferencia genética horizontal en la adaptación de los microorganismos a desafíos ambientales. En este trabajo mostramos como Tetragenococcus, un género ampliamente utilizado en Asia para la fermentación de alimentos como el kimchi o la salsa de soja, se ha adaptado al ambiente lácteo a través de eventos de transferencia genética horizontal. En particular, nuestros resultados muestran como Tetragenococcus forma parte de la microbiota característica de los quesos de las DOP Picón de Bejes-Tresviso y Cabrales, donde puede representar hasta un 20% del total del recuento bacteriano. Análisis metagenómicos indicaron que este género no está presente en otros quesos azules, como Roquefort, Bleu d¿Auvergne o Stilton, y por tanto representa una adaptación local característica de los quesos de la región de los Picos de Europa. A pesar de esta sorprendentemente limitada distribución geográfica, los análisis genéticos revelaron que al menos tres especies diferentes de Tetragenococcus han sido capaces de adaptarse a través de diferentes trayectorias evolutivas. Nuestros resultados indican que especies con capacidades metabólicas similares pueden adaptarse localmente al ambiente lácteo mediante múltiples eventos independientes de transferencia genética horizontal.
