Influencia del periodo de maduración en el contenido en procianidinas de las semillas de uva c.v. Tempranillo

Abstract

Se estudian las procianidinas de las semillas de uva Tempranillo y su evolución durante el período de maduración. Se tomaron muestras de uvas semanalmente, desde cinco semanas antes de la posible fecha de vendimia hasta una semana después. Las pepitas se maceraron con etanol/agua (20:80) y en el macerado se realizaron extracciones sucesivas con éter etílico y acetato de etilo, que se analizaron por HPLC-PAD-MS. En el extracto de éter se encuentran mayoritariamente catequina y epicatequina en alta concentración, y en el extracto de acetato de etilo se identifican procianidinas galoiladas y oligómeros. La mayor parte de estos compuestos muestran un máximo de concentración dos semanas antes de la vendimia y un mínimo en el momento de vendimia. Los dos extractos dan una información complementaria de los compuestos de las semillas de uva y su evolución en el período de maduración, observándose una tendencia similar durante dicho período.
