¿Existe engaño en el etiquetado de la "soja verde"?

Abstract

La soja (Glycine max. Merit) y los alimentos que de ella derivan cada vez están más presentes en los mercados debido a que se les atribuyen propiedades beneficiosas para la salud. La soja contiene isoflavonas, compuestos fenólicos que pueden desempeñar un papel beneficioso en la prevención de enfermedades relacionadas con la oxidación incluyendo arterioesclerosis, hipertensión, cáncer de mama etc. En los mercados, la semilla de soja se comercializa en una amplia variedad de colores y tonos, desde el amarillo al negro pasando por el verde, marrón y rojo. En algunos casos, la denominada “soja verde” que se encuentra en los mercados españoles se ha comprobado que en realidad se trata de otra legumbre, la judía mungo (Vigna radiata [L] Wilczek). En este estudio se ha analizado la composición fenólica de esta judía frente a la “soja amarilla” observándose en su composición la ausencia de isoflavonas, principal compuesto bioactivo de la soja, lo que podría considerarse como un engaño al consumidor.
