Abstract

El desarrollo de los sistemas de certificación de productos alimenticios ha tenido una gran importancia en las décadas pasadas en España, con una legislación desarrollada especificamente para tal fin y con todo un entramado administrativo, que llegó incluso a crear, dentro de la administración española, un ente autónomo (Instituto Nacional de Denominaciones de Origen, INDO) para el control y gestión del proceso. En la actualidad existen distintas formas o niveles de la certificación (Denominación de Origen, Denominación Genérica, Denomiación Específica, etc.), en función del grado de cumplimiento de los requisitos exigidos...
