Los peces tienen la tendencia de acumular preferentemente xantofilas, ya que únicamente en los ovarios y ocasionalmente en el hígado se han detectado cantidades apreciables de carotenos. Las xantofilas que generalmente se encuentran en los peces son la luteína, un pigmento muy probablemente taraxantina, aunque no completamente identificado, y astaxantina.
