[...] Dicho lo que antecede, parece como si en el mar hubiera peces con grasa y peces sin ella; sin embargo, nada más lejos de la realidad. Todos los peces poseen grasa en cantidad apreciable, pero vayamos por partes. Si observamos, mejor aún, si analizamos la carne de una merluza comprobamos que esta especies prácticamente carece de grasa, tanto si es del Cantábrico, como "moruna". Igual ocurre con el lenguado, bacalao, móllera, rape, etc. Sin embargo, si bien su carne carece de grasa, no ocurre así con sus órganos internos, especialmente el hígado, el cual, según las épocas del año, puede contener hasta un 70 por 100 o más.
