Actividad enzimática proteolítica del boquerón (Engraulis encrasicholus L.)

Abstract

[ES] Aunque no tenemos referencias bibliográficas sobre estos aspectos bioquímicos en el boquerón, sí podemos comentar algunas citas interesantes en otras especies, en las que se estudian diferentes actividades enzimáticas y especialmente la proteolítica. Ushiyama (1968) estudia la actividad enzimatica proteolítica de los ciegos pilórios del salmón, Oncorhynchus keta llegando a la conclusión de que la proteasa aislada es del tipo de la tripsina. Makinodan e Ikeda (1969 a) y (1969 b) hacen un estudio enzimàtico de proteasas musculares en varias especies, observando una actividad tanto en el rango ácido como en el alcalino. […] Todos estos resultados quedan recopilados en la tabla XIII donce puede observarse que para la masa visceral la temperatura óptima es mayor a pH ácido (60º C), mientras que para los músculos dorsal y ventral es ligeramente mayor a pH alcalino 55º C y 50º C respectivamente. [...]

[EN] Proteolytic activity has been studied in dorsal and ventral muscular tissue and in the visceral mass. It was confirmed that there are two kinds of proteolytic activity in every one ot the three parts of the hody inolved, one in the acid and another in the alcaline pH range. [...]
