Interacciones entre acidez y estado coloidal en el aceite de oliva virgen

Abstract

El estudio de microscopía de aceites de oliva vírgenes frescos coloidales ha puesto de manifiesto la presencia de una fase coloidal adicional a las tres fases conocidas del aceite de oliva ¿en rama¿, siendo estas la fase lipídica mayoritaria, la fase acuosa formada por gotitas microscópicas de agua y la fase formada por partículas sólidas microscópicas. Esta fase adicional corresponde a formaciones coloidales globulares, irregulares pero casi esféricas. Dichas formaciones alojan un contenido que se deduce acuoso, observándose la presencia de estructuras físicas que constituyen una pared entre la bolsa coloidal de agua y la masa del coloide. El contenido acuoso aloja partículas sólidas de una amplia diversidad de formas y tamaños. Es lógico pensar que las estructuras físicas de los contornos globulares observados corresponden a compuestos anfifílicos presentes en el aceite. Entre ellos podrían destacar, tanto cualitativa como cuantitativamente, los ácidos grasos, responsables de la acidez de los aceites de oliva. En este trabajo, se discuten las posibles implicaciones de dichas hipótesis, destacando entre ellas que dichos ácidos grasos podrían estar cautivos, en lugar de libres.
