Abstract

En la actualidad hay numerosos estudios sensoriales en referencia a los limpiadores de paladar, tanto para la eliminación de residuos en boca de alimentos y matrices alimentarias no vínicoas como para la eliminación y reducción de las sensaciones que se acumulan tras la realización de catas de vino (astringencia, acidez, etanol), pero no hay ningún consenso que determine cuál es el mejor limpiador en estos aspectos. Este trabajo se centrará centra en la evaluación de diferentes limpiadores de paladar para el vino tinto mediante un panel de entrenados, empleándose para ello agua mineral a temperatura ambiente, agua carbonatada a temperatura ambiente, galletas cracker sin sal y leche semidesnatada. Se realizarán una serie de medidas analíticas como la determinación del contenido en polifenoles mediante el método de Folin Ciocalteau o el empleo de técnicas rápidas para la cuantificación del contenido en etanol residual y acidez en boca tras el uso de estos limpiadores, así como el empleo de un kit de ensayo de proteínas para la determinación del contenido proteico basal que presentan cada uno de los panelistas y determinar si este contenido influye en la percepción sensorial. Además, se realizarán medidas sensoriales de los atributos anteriormente mencionados. De forma general, se obtuvo que la leche semidesnatada y las galletas cracker sin sal aportan una mayor sensación de limpieza en boca, siendo la leche semidesnatada y el agua carbonatada los limpiadores de paladar que más cantidad de polifenoles eliminan de la mucosa oral.
