La interaccion con M. pulcherrima promueve una respuesta transcripcional que recuerda al efecto crabtree en S. cerevisiae

Abstract

En un esfuerzo por diferenciarse de sus competidores, la industria vitivinícola está incorporando las levaduras no-Saccharomyces como cultivos iniciadores, permitiendo que por primera vez exista más de una especie mayoritaria coexistiendo durante la fermentación. Nuestro laboratorio está interesado en estudiar los efectos transcriptómicos derivados del co-cultivo. Hemos mostrado como estas levaduras no-Saccharomyces influyen sobre el transcriptoma de Saccharomyces cerevisiae en condiciones anaeróbicas (mayor parte de la fermentación) y aeróbicas (arranque de la fermentación). La co-inoculación produce de forma general una respuesta relacionada con la absorción de glucosa y la glicólisis, el metabolismo lipídico de membrana, la pared celular y el uso de fuentes alternativas de nitrógeno.
