Evaluación de las características espumantes sensoriales e instrumentales de vinos espumosos naturales elaborados con variedades de uva autóctonas españolas

Abstract

La espuma es una de las características más importantes en la calidad de vinos espumosos. Por ello, el objetivo de este trabajo fue estudiar las características espumantes de diferentes vinos espumosos naturales blancos y rosados elaborados con variedades de uva autóctonas de Castilla y León y la correlación entre los parámetros evaluados sensorial e instrumentalmente. Los vinos espumosos elaborados con las variedades Verdejo y Prieto picudo fueron los mejor valorados por los catadores desde el punto de vista de la calidad de la espuma. Estos resultados estuvieron de acuerdo con los parámetros de la espuma evaluados con el equipo Mosalux. Teniendo en cuenta los datos de la espuma que se encuentran en la bibliografía, los vinos espumosos elaborados con las variedades de uva Albarín, Verdejo, Godello y Prieto picudo tienen propiedades de la espuma similares a los vinos espumosos de alta calidad como los Cavas y Champagnes, por lo que se considera que estas variedades de uva son las más interesantes para elaborar vinos espumosos naturales de calidad.
