Aminas biógenas: El lado oscuro de las bacterias lácticas

Abstract

A lo largo de esta ponencia se revisaron principalmente los trabajos relacionados con las BAL productoras de AB en queso. Mediante técnicas dependiente e independientes de cultivo hemos identificado Enterococcus faecalis como el principal productor de tiramina, Lactobacillus parabuchneri de histamina y E. faecalis y Lactococcus lactis como los principales productores de putrescina. Posteriormente, hemos estudiado la función fisiologica y la regulación genética de las rutas de biosíntesis. Los resultados obtenidos nos permitieron el desarrollo de métodos independientes de cultivo para la identificación rápida de bacterias productoras de AB en el queso, lo que permite discriminar iniciadores potencialmente productores, conocer cómo estas BAL se han pasado ¿al lado oscuro¿, sus puertas de entrada en las queserías, la evolución dinámica de la población a lo largo de la fabricación del queso, etc. También se presentarán métodos específicos para controlar sus poblaciones y evitar la acumulación de AB en los alimentos, sin afectar la microbiota responsable de las características organolépticas deseadas. El objetivo final de estos trabajos es impedir la acumulación de AB en queso, evitando la presencia de las cepas productoras a lo largo de la cadena alimentaria, y en aquellos casos donde esto no sea posible, evitando su biosíntesis o favoreciendo su degradación durante la fabricación y almacenamiento.
