La anemia por deficiencia de hierro constituye un problema de salud pública a nivel global. Entre las estrategias dietéticas para su prevención, la utilización de alimentos fortificados con hierro es la más práctica y eficaz. Hoy en día además, se busca que los alimentos fortificados tengan efectos beneficiosos adicionales, obteniendo así un producto más atractivo para el consumidor.
