Acrilamida: novedades sobre una sustancia en el punto de mira

Abstract

La acrilamida no es un peligro nuevo, y en los últimos años el debate sobre este contaminante ha sido recurrente. En la actualidad, la Comisión Europea está trabajando en un nuevo reglamento, inspirado en los códigos de buenas prácticas, que permitirá establecer medidas de reducción y control de este contaminante en diversos productos y sectores alimentarios. ¿Cuál es la situación en nuestro país? ¿Cómo ha evolucionado la presencia de este contaminante en los últimos años?.

Resumen del trabajo presentado al 14º Congreso AECOC de Seguridad Alimentaria y Calidad, celebrado en Madrid el 21 de febrero de 2017.
