Efecto del consumo de yogur de oveja y vaca sobre la microbiota de adultos sanos

Abstract

[Objetivos]: Estudiar los cambios en la microbiota intestinal de sujetos sanos sometidos a un consumo regular de yogur de oveja (entero o semidesnatado) o yogur de vaca entero. [Metodología]: Estudio semiciego, randomizado y cruzado realizado en adultos sanos con niveles de colesterol entre 190-240 mg/dl. Cada intervención duró 5 semanas, durante las cuales consumieron diariamente 2x125mg de: 1) Yogur de oveja entero (OE, 6.8% grasa); 2) Yogur de oveja semidesnatado (OS, 2.9% grasa); 3) Yogur de vaca entero (V, 2.9 % grasa). Las muestras de heces se recogieron al principio y al final de cada intervención para analizar la microbiota intestinal mediante qPCR. Se calcularon las tasas de cambio de cada grupo bacteriano (valor final–valor basal)/valor basal), así como un tertil de riesgo cardiovascular (CV) (colesterol total/colesterol HDL). Para evaluar si la tasa de cambio variaba con los distintos tratamientos, se realizaron modelos mixtos lineales con tests de Bonferroni. Sexo y/o tertil CV se incluyeron en posteriores ajustes del modelo utilizando el test de Wilcoxon. [Resultados]: Se encontró una disminución significativa de Enterococos tras el consumo de V en comparación con el cambio observado con consumo de OS (P=0.049). En mujeres con alto riesgo CV, la intervención con OE disminuyó Eubacterium rectale_Blautia coccoides vs. OS, tras la cual no hubo cambios (P=0.028). De forma similar, Clostridium leptum group disminuyó tras el consumo de OE, y por el contrario aumentó tras el consumo de OS (P=0.028). [Conclusiones]: El efecto del consumo de yogures de distinta composición láctea produce un efecto discreto en la microbiota intestinal que parece más acusado en mujeres con determinadas características de perfil lipídico plasmático.
