La familia 1 de glicosil hidro/asas (GH1) incluye proteínas con actividades muy interesantes para la industria alimentaria, tales como beta-glucosidasas y beta-galactosidasas. En este trabajo se ha caracterizado bioquímicamente una proteína de L. plantarum WCFSI que presenta actividad beta-galactosidasa.
