Abstract

Se desarrollaron cromatogramas sobre el papel de extractos acuosos de Scomber scombus en distintos estados de descomposición, para estudiar comparativamente el número, distribución e intensidad de las manchas reveladas con ninhidrina, es decir, se buscó si existía una diferenciación cualitativa entre cromatogramas de extractos nitrogenados de pescado efectuados a distintas horas después de su captura, intentando hallar alguna relación entre el aspecto del cromatograma y las horas de frescura.
