El erizo de mar es un marisco que, a pesar de no consumirse en España de una forma intensa y general, merece ser digno de atención, debido a los problemas que actualmente se vislumbran en aquellas costas –como la asturiana- que, sometidas desde 1941 a unos métodos de extracción y explotación incontrolados y de efectos desconocidos en detalle, comienzan a presentar síntomas de agotamiento en la producción del erizo de mar. El interés del erizo de mar queda fuera de dudas al considerar que es muy estimado en ciertos paises, y que existen en la actualidad firmas nacionales exportadoras a mercados europeos.
