Abstract

[ES] Tradicionalmente la identificación de variedades y cultivares de vid (Vitis vinífera L.) se ha venido realizando mediante la descripción de sus características morfológicas externas y agronómicas, siguiendo para ello las normas dictadas por los Organismos Internacionales con competencias en el campo de la Ampelografía y la Ampelometría. Sin embargo, estos caracteres están muchas veces fuertemente influenciados por factores ambientales, lo que puede traducirse en grandes variaciones fenotípicas. Por esta razón se hace necesario el uso de métodos bioquímicos -independientes de las condiciones medioambientales— que permitan obtener información complementaria. En este sentido, una de las principales preocupaciones de los investigadores en el campo de la Viticultura —y de un modo especial en el de la mejora genética- ha sido la dificultad de encontrar marcadores bioquímicas realmente útiles en la diferenciación entre distintos cultivares. Se han propuesto diferentes compuestos con este fin, siendo los de naturaleza proteica (proteínas totales e isoenzimas) los de más amplia utilización. En este trabajo proponemos la utilización de los dihidroflavonoles (compuestos de naturaleza fenólica) como una posible herramienta para la solución de este problema. Utilizando técnicas cromatográficas (PC, TLC y HPLC) hemos aislado e identificado tres dihidroflavonoles de la variedad Albariño. Dos de ellos, el dihidroquercetin-3—glucósido (Taxifolín—3—glucósido) y el dihidrokenferol-3—glucósido (Aromadendrín-3-glucósido), encontrados por primera vez en la familia Vitaceae, lo que realmente les confiere un enorme interés desde el punto de vista taxonómico, y el tercero, el dihidroquercetín—3—rhamnósido (Astilbín), previamente identificado en uvas de Vitis vinífera. Las identidades de estos tres compuestos se han confirmado mediante la utilización de técnicas espectroscópicas y tras sus hidrólisis ácidas.

[EN] Identification of Vitis Vinifera L. varieties has traditionally been based on ampelographic and ampelometric descriptions. Nevertheless, the morphological and agronomic characters used for this description of grape cultivars are often strongly influenced by environmental factors, resulting in large variations in phenotype. For this reason, biochemical methods can be used to gain further supplementary information. In this sense, one of the main important preoccupations for grapevine workers is the difficulty for finding biochemical markers really useful to distinguishing between different cultivars. In this paper, we propose dihydroflavonols as a possible tool for grape cultivar identification. Chromatographic techniques (PC, TLC and HPLC) were used for isolation and identification of dihydroflavonols from Vitis vinifera L. variety Albariño. Three dihydroflavonols were isolated and identified: dihydroquercetinw3-glucoside (Taxifolin—3-glucoside) and dihydrokaempferol—3—glucoside (Aromadendrin—3-glucoside), isolated for the first time from Vitaceae, and dihydroquercetin—B-rhamnoside (Astilbin) previously reported from Vitis Vinifera grapes. Spectroscopic techniques and acid hydrolysis confirm the identities of these compounds.
