[ES] Los compuestos volátiles (terpenos, C13-norisoprenoides, compuestos en C6, esteres, aldehídos, cetonas, fenoles volátiles, etc.) son compuestos orgánicos del metabolismo secundario de las plantas a los que recientemente se le atribuyen propiedades que suponen un beneficio para la salud. Todos ellos proporcionan un aroma característico y por este motivo tienen también un valor comercial. En este capitulo desarrollamos, de manera resumida, las propiedades funcionales de alguno de estos compuestos considerados biológicamente activos ya que contribuyen a prevenir o retrasar enfermedades.
[EN] The volatile compounds (terpenes, C13-norisoprenoids, C6-compounds, esters, aldehydes, ketones, volatile phenols, etc.) are organic compounds organic produced by the secondary metabolism of the plants, which recently are attributed properties that suppose a profit for the health. They provide a characteristic aroma and for this reason they have also a commercial value. In this paper we described the functional properties of these compounds considered biologically active since they contribute to warn or delay diseases.
