Componentes bioactivos de la grasa láctea

Abstract

Históricamente la grasa láctea ha sido uno de los constituyentes más importantes de la leche en cuanto a su valor nutricional, a la aptitud tecnológica y palatabilidad que aporta a los productos lácteos. Sin embargo, como consecuencia de su contenido en ácidos grasos saturados y colesterol, se ha castigado a la grasa láctea hasta situarla al mismo nivel que otras grasas de origen animal, observándose año tras año una disminución continuada en la tendencia de consumo de este producto.

Este trabajo ha sido financiado por diferentes proyectos de investigación: CYTED N° XI.24; ALIBIRD S-0505/AGR/000153 de la Comunidad de Madrid y CONSOLIDER Ingenio 2010 (FUN-C-FOOD):CSD 2007-00063.
