Abstract

[ES]: La industria de alimentación y bebidas es el primer sector en España, siendo considerado por ello como el principal motor de la economía del país. Europa y España en particular, comienzan a emerger de la crisis económica. La implantación real de un nuevo modelo económico es extremadamente necesaria y urgente para salir definitivamente de la crisis y que las tasas de ocupación laboral crezcan al ritmo más rápido posible. El nuevo modelo económico hay que basarlo en la competitividad industrial. La alimentación para la salud es un argumento de éxito para la innovación alimentaria del presente y del futuro, pero la I+D que conduzca a ello no puede plantearse ya bajo los parámetros convencionales, sino que las tecnologías ‘ómicas’ deben formar parte de las metodologías, con el fin de que puedan identificarse los mecanismos moleculares que explican las actividades biológicas conseguidas. Además, no cabe ya duda de que el componente genético tiene que ser considerado, ya que cada vez hay más evidencias de que es determinante de la respuesta a la alimentación por parte de los individuos, que se benefician en distinta medida de sus efectos saludables.

[EN]: The food and beverage industry is the first sector in Spain, thus is considered as the main engine of the country’s economy. Europe and Spain in particular, begin to emerge from the economic crisis. The actual implementation of a new economic model is extremely necessary and urgent to definitively overcome the crisis and reach occupation rates growing at the fastest rate possible. The new economic model must base it on industrial competitiveness. Food for health is an argument of high probability of success for food innovation present and future, but new technologies, as the omics, must be a part of methodologies in order to identify molecular mechanisms underlying biological activities. In addition, there is no longer doubt that the genetic component has to be considered because there is increasing evidence that is decisive response to food by individuals who benefit in varying degrees of its healthy effects.
