La mayor parte de las poblaciones del mundo, pierden parte de su actividad de la lactasa, en el intestino delgado y después de la infancia. Dado que la leche y sus derivados son alimentos consumidos con un alto valor nutricional, durante las últimas décadas se han desarrollado nuevas alternativas para la obtención de productos lácteos deslactosados, que satisfagan las necesidades de las personas que sufren de intolerancia (Figura 1).
