Abstract

El aprovechamiento de subproductos de la industria agroalimentaria se ha convertido en los últimos años en una actividad de gran importancia económica. Dos de los subproductos más abundantes son el suero de quesería (SQ) y el suero de tofu (ST). El SQ, rico en lactosa, ha sido previamente utilizado para la síntesis enzimática de galacto- y gluco- oligosacáridos potencialmente prebióticos. Sin embargo, el ST, fuente de sacarosa y α-galactósidos, no se ha empleado hasta ahora para este fin. Por ello, podría resultar interesante el desarrollo de una nueva vía de revalorización del ST, consistente en su utilización como sustrato único o en presencia de SQ, para la síntesis de derivados fructosilados (DF) potencialmente prebióticos, incluyendo FOS, o lactosacarosa, con efecto prebiótico científicamente reconocido. Así, el objetivo del presente trabajo ha sido la obtención eficiente de lactosacarosa, a partir de SQ:ST, y DF, a partir de ST, mediante transfructosilación enzimática. La síntesis de lactosacarosa se llevó a cabo en presencia de la levansacarasa SacB de Bacillus subtilis CECT 39 a 37 ºC y pH 6, durante 180 min. Para la síntesis de DF se empleó el preparado enzimático Pectinex Ultra SP-L de Aspergillus aculeatus (60 ºC, pH 5,5 y 24 h). Ambas reacciones, monitorizadas por LC-RID, dieron lugar a altos rendimientos y una elevada producción de DF y lactosacarosa, tras un tiempo reducido. En conclusión, se ha desarrollado una alternativa novedosa, sostenible y eficaz de revalorización del ST y SQ mediante la síntesis enzimática de lactosacarosa y DF, con alto valor añadido.
