Perfil aromático de vinos blancos elaborados con variedades minoritarias de la D.O.Ca. Rioja

Abstract

En este trabajo se estudió el perfil aromático de vinos blancos elaborados con variedades minoritarias de la D.O.Ca. Rioja (Tempranilla blanco, Maturana blanca y Turruntés) en comparación con otras tradicionales de la zona (Viura, Garnacha blanca y Malvasía riojana). Se observaron importantes diferencias varietales en la concentración de compuestos con gran incidencia organoléptica. Tempranilla blanco destacó por una concentración elevada de acetato de isoamilo, butirato de etilo y diacetilo. Maturana blanca presentó un alto contenido en acetato de isoamilo y Turruntés alcanzó la concentración más elevada de alcoholes superiores y de 2-feniletanol. El análisis discriminante permitió la separación de los vinos varietales, y mostró similitudes entre algunas variedades según la función considerada.
