Optimización de un método microbiológico para la detección de monensina sódica en pienso

Abstract

El empleo de sustancias de acción farmacológica en alimentación animal puede dar lugar a la aparición de las mismas o de sus residuos en los alimentos, con consiguiente nesgo para la Salud Pública. La monensina es un compuesto farmacológicamente activo, catalogado como antibiótico ionóforo, tratándose en concreto de un poliéter monocarboxílico (Richardson et al. 1976) que se comercializa en forma de sal sódica. Se obtiene a partir de la fermentación de una cepa de Streptomyces cinnamonensis, bacteria que se encuentra comúnmente en muestras de suelos, siendo aislada por primera vez en 1967 por Haney y Hoehn. Tanto su función coccidiostática en pollos, como su actividad promotora de crecimiento, han extendido su uso en las producciones pecuarias, si bien, el empleo de monensina es sólo temporal ya que la Comisión de Unión Europea propuso su prohibición a partir de enero de 2006. No obstante, la ilzación de monensina está restringida, actualmente, en varios proyectos de producción de carne de calidad. El objetivo del presente trabajo fue estudiar la sensibilidad de diferentes microorganismos a la acción de la monensina, con el fin de desarrollar un método eficaz, basado en la inhibición del crecimiento microbiano, para la detección de monensina en piensos y en premezclas.
