Estudio comparativo del crecimiento y de las características de la canal de corderos de raza Assaf y Assaf x Merino

Abstract

Los sistemas ganaderos de ovino de leche en Castilla y León han sufrido una mejora en la producción como consecuencia de la sustitución las razas autóctonas por razas cosmopolitas más productivas, como es el caso de la raza Assaf (Lavín et al., 1997, Ugarte et al., 2001). Normalmente, los corderos procedentes de este tipo de explotaciones son comercializados, de forma tradicional, como lechales. Sin embargo, la producción de canales más pesadas podría corregir la estacionalidad en la producción de corderos lechales a la par que se contribuiría a diversificar la producción. Considerando esta situación, y la escasa información científica que existe sobre la raza Assaf, se planteó este trabajo cuyo objetivo es estudiar el crecimiento y las características de la canal de corderos de raza Assaf y su cruce con raza Merina, en condiciones de cebo intensivo.
