Ignacio Doménech simboliza la modernidad en la cocina española desde finales del siglo XIX. De formación europea, comprende la importancia de transmitir los conocimientos profesionales y lo hará de tres formas: la realización práctica de menús, la enseñanza, para lo que crea la primera escuela de cocina, y la edición de textos. Como editor mantendrá durante cuarenta años la revista El Gorro Blanco, al tiempo que publica gran cantidad de libros ilustrados por los mejores dibujantes del momento.
