Abstract

[ES] La presente invención se refiere a una composición líquida emulsionada que presenta un comportamiento monomodal estable en el tiempo y que está compuesta por agua, un hidrato de carbono, una grasa saturada, un emulgente y un saborizante. Otro aspecto de la invención se refiere al procedimiento de obtención de la composición emulsionada que incluye un doble tratamiento homogeneizador. Finalmente, la invención se refiere al uso de la composición emulsionada para evaluar la tolerancia a los triglicéridos en humanos, a través de un procedimiento estandarizado que comprende la administración oral de una cantidad calculada en función de la superficie corporal de las personas que han de ingerirlo, y la determinación del pico de triglicéridos en sangre y del tiempo de aclaramiento de los mismos, en un reducido periodo de tiempo.

[EN] The invention concerns an emulsified liquid composition which has stable monomodal behaviour over time and is composed of water, a carbohydrate, a saturated fat, an emulsifier and a flavouring. Another aspect of the invention concerns the method of producing the emulsified composition, which includes a double homogenizing treatment. Finally, the invention concerns the use of the emulsified composition for assessing tolerance to triglycerides in humans, by way of a standard procedure which involves the oral administration of an amount calculated as a function of the body surface area of the persons who are to ingest it, and determining the peak of triglycerides in the blood and the time they take to clear in a reduced period of time.
